Coco-nutty Power Bites
Need a quick option for energy on the go, for your weekend outdoors, or for a make a ahead breakfast? These pop-able bites are packed full of keep-you-full nutrients, and are even tastier than they look!

A food processor
1 Tbsp chia seeds, soaked in ¼ cup water
¼ cup coconut meal
½ cup almond meal
¼ cup cashews, raw
¼ cup coconut shreds
2 Tbsp hemp seeds
4 dates, pitted
¼ tsp Himalayan pink salt
Extra coconut shreds for garnish
Optional: mix together 3 Tbsp Cocoa Powder and ½ tsp
cinnamon for coating. Set aside.
You will make: 8 energy bites!
1.)
Preheat oven to 300 degrees F

In a small dish, mix chia seeds into water. Set
aside for fifteen minutes to soak the chia seeds completely

Place all remaining ingredients in a food
processor. Pulse on low a few times to start mixing, then process on high to
blend all ingredients together
4.)
While on high, pour soaked chia seeds into the
food processor. Continue processing until the ingredients come together to form
a dough-like ball
5.)
Pour dough ball out onto a cutting board or
other flat surface
6.)
Divide the dough into eight equal pieces,
rolling each piece in between your palms to form a small ball
**Optional: roll each ball in the
cocoa powder and cinnamon mixture to coat.**
7.)
Gently press a small pinch of coconut shreds
into the top of each ball
8.)
Place the rolled energy ball on a parchment
lined baking sheet and bake in oven for 20 minutes
9.)
Remove from oven, let cool and enjoy
