Papaya Protein Salad


Try this simple yet hearty salad whenever you're looking for a unique and delicious ingredient combo with satisfying crunch and craveable flavor.

Coconut Aminos and Lime Dressing:
Makes ½ cup dressing

¼ cup olive or avocado oil
¼ cup coconut aminos
1 Tbsp agave syrup
Juice of 1 full lime
½ tsp kosher salt
Dash black pepper

1.)   In a mixing bowl, whisk all ingredients together well to combine

Quinoa:
Makes 1 cup of cooked Quinoa

1 Tbsp vegan butter
½ tsp kosher salt
½ cup quinoa
1 cup water

1.)   In a medium sized pot, melt butter over medium heat
2.)   Stir quinoa and salt into melted butter. Toast until you can hear slight crackling, about 30 seconds
3.)   Add water, stir and bring to a boil
4.)   Once boiling, cover and turn heat down to a simmer
5.)   Simmer until water is absorbed and quinoa germ is visible, approximately 20 minutes


Put it all together!


You will need:
1 Bed of your favorite greens (pictured with Boston lettuce)
1 cup of cooked Quinoa 
1 cup of Papaya, cut into small chunks
2 tsp hemp seeds
1 tsp of coconut shreds
Coconut Aminos and Lime dressing
Garnish of cilantro leaves to taste





You will make:
Either 1 entrée salad or divide into 2 side salads

1.)   On a large plate, gently lay out your bed of greens
2.)   In a small bowl, combine quinoa and papaya chunks. Toss together and spread over bed of greens.
3.)   Drizzle dressing generously over entire plate
4.)   Sprinkle hemp seeds and coconut shreds over salad
5.)   Garnish with cilantro leaves and optional slice of papaya
